Millet Pilaf

This is a recipe for a tasty millet pilaf.  It is a wonderful side dish to greens, fish, and chicken.

Ingredients:

Procedure:
Soak millet overnight or at least 5 hours.
Rinse, and pour off as much water as possible.
In a medium sized pot or large saucepan, heat the butter or oil.
Saute the millet and onions briefly, and then add the parsley, and toss a bit more.
When the onions are just starting to be tender, add the broth.
When it is boiling, turn the heat down to medium-low, and cover.
When the liquid is absorbed, taste the millet to see if it's soft enough for you.  If it isn't, add about half a cup of water, put the cover back on, and give it 3-5 more minutes.  Repeat if necessary.
When it's soft enough for you, remove from the heat, and fluff with a fork.
