Cabbage Greens With Pine Nuts

Most stores in the west discard the tougher green leaves of cabbage, but some people think this is the best part.

Ingredients:

  • 1 large pot
  • 2 tbsp. lard, bacon fat, schmaltz, or palm oil
  • 2 lbs. or 1kg. green cabbage leaves
  • 1 large white or yellow onion
  • 1 or 2 cloves of garlic (to your taste)
  • 1/2 cup pine nuts
  • (optional) 1 hot pepper or 1/2 tsp. hot paprika
  • sea salt to taste (usually 2 tsp. for the whole pot)
  • cracked pepper to taste
Procedure:
Slice the cabbage greens 1cm. wide across the grain, and then wilt them by soaking them in salty water for 20 minutes.

In the meantime, slice your onions, garlic, and hot pepper.

Discard the water and rinse the cabbage greens.

In the large pot, heat the oil until melted, and  then add the cabbage greens.  Sweat them, stirring occasionally, until the leaves are just beginning to get softer, and then add the onions.

When the onions are just starting to be a little clear around the edges, add the garlic and peppers and pine nuts.  Toss them until they have a little of the oil, and then add just enough water to cover it all.

Add the salt and pepper.  Cover, and bring it all to a boil on high heat.

Once it's boiling, turn the heat down to just above low, and cover.  Let it simmer like this for about half an hour, or until the cabbage greens are very tender.

Serve hot.  Some people like it with a dash of wine vinegar, tomato puree, or pepper sauce.
